What causes beer to foam up when you hit the top of that bottle with the bottom of another?

So far this year we've had burgers, bbq, chicken, stuffed french toast (morning game) and spiral ham sandwhiches....I'm running out of interesting ideas for game food. It is in the south so eating will be our main event while we wait on the game. :) Help!

I just use Folgers or Maxwell house. but i find I am either putting too much or too little in the filter. I want a deep rich coffee. Not too week and not so strong it has the consistancy of mud! Please help.
