I've been a meat-eater all of my life, however, due to high blood pressure, I an begining to make some life choices---no smoking, limiting salt intake. I'm also cutting out meat, and trying to eat only fish, but I have yet to find any fish I'm crazy about. Anyone have any suggestions for vegetarian or vegan meals for me? I'm a newcomer to this, but I'm open to about anything. Right now, the only thing I'm good at making is black bean burritos!!

Today I had to give a co-worker a beans-and-rice dish I had, the type you just add water to, because I didn't see it had "chicken fat" as an ingredient until it was too late. I am allergic to eggs and poultry. I've also gotten very sick from canned vegetable soups and realized it was because they used chicken broth. I know I should make more myself and *always* read the ingredients, but why would food companies add chicken fat or broth in the first place?! Don't they know that some people truly want a vegetarian option?!

I'm ranting, but I'm also interested in sensible explanations.

I've never eaten asparagus or artichokes, but when some people cook them, they look delicious. I've never tried them because so many people say they taste horrible (most of these are people who pretty much dislike veggies as a rule, though). Is there anything you can compare them to, as for taste? Do you have any good non-frilly recipes for either?

I am thinking about becoming a vegan for the health benefits. I have no problem eating animals or carrying around my leather purses or even hunting overpopulated animals for sport. I just want to know if it really is better to eat all those veggies or if it is not any different from eating a well balanced meals of chicken/fish with veggies etc. If you could direct me to some books or websites that have more ndepth information I would really appreciate it. Why are they calling themselves vegetarian? After all it is flesh.
I even noticed that some restaurants are calling some of their fish dishes vegetarian.
I thought that if you call yourself vegetarian, then at least one should know what it is.
