here in india we soak em till they are spongy (if you have the crunchy ones that is), then we curry them, just fried onions/garlic/ginger, little tomato puree, some water for curry, salt to taste, you can dd some indian spices, like curry powder, dump in some green peas and soya chunks, its nice with rice or bread. its good diet food coz its soya but how you prepare it determines its calorie content, I guess if you just soak em, dress em with olive oil, vinegar, salt and pepper kind of salad with other veggies then its definitely diet food.
