I work casually at a Thai restuarant and have taken a liking to the food. I normally take some home at the end of my shift, but I would rather cook it fresh. My boss has given me the recipe for Tom Yum soup with Noodle for me to make but when my husband saw it had fish sauce in it - a vital ingredient - he refuses to try it.
He has been told that fish sauce is made by fisherman catching fish and leaving them in big nets over drains and the rotting oil from the fish is dripped down the drain and collected to make the sauce.
Is this true? and if it is, can I substitute soy sauce instead of fish sauce in the recipe so my husband will eat it. I don't want to offend my boss by asking her due to the language barrier.

i LOVE vietnamese restaurants but i have this problem.
i don't know what it's called but they use this green leafs for every meal.
i just cannot stand the smell. it's soo strong that it ruins the smell of the foods.

I have just had a chinese takeaway, (chicken in black bean sauce, and my wife had chicken curry.) I am convinced the meat was not chicken, the texture was not right, when you cut into chicken, it is slightly stringy,right? well this was smooth, and rounded texture, almost slimy,rather like scallops, it was not off, or anything, but my wife said it too, there was just something not right about it,( and I have had a few chinese takeaways in my time) The local newspaper has recently had an article about a lot of missing cat's in my area, including 3 close neighbours. What should I do? take it back? report it? leave it? What would you do? I don't want to get anyone into trouble, these guys work hard.But I don't want people to lose their pets either.I am suspicious, and so are other people in our area.

I have been to numerous pot luck with my church people and I noticed that most people tend tobring the easiest to prepare dish or even buy them from the grocery stores... salads or desserts. It is rare that someone wld take the effort to make everybody's favorite.

I eat a lot of pasta, but I couldn't make my own sauce if my life depended on it so I end up buying sauce from local grocery stores. Most pasta sauces sold in todays stores are garbage, never taste good enough, and all the packaging is very misleading, every label has some sort of a BS line such as "authentic Italian sauce" etc.

My question is if anyone out there knows of a good and authentic pasta sauce manufacturer that can be found in stores, or at least ordered online?

If You all know me I am from the south and I love southern cooking from black eyed peas, corn on the cob to good ole cornbread. But I do like other foods too.
