Stir-fried Scallops with Asparagus recipe
information
Asparagus is extremely popular among the Chinese Thai. The combination of garlic and black pepper gives this dish its spiciness. You can substitute the scallops with prawns or other firm fish.

ingredients
60 ml (4 tbsp) vegetable oil
1 bunch asparagus, cut into 5 cm (2 in) lengths
4 garlic cloves, finely chopped
2 shallots, finely chopped
450 g (1 lb) scallops, cleaned
30 ml (2 tbsp) fish sauce
2.5 ml (1/2 tsp) coarsely ground black pepper
120 ml (4 fl oz) 1/2 cup coconut milk
coriander leaves, to garnish


method
1. Heat half the oil in a wok or large frying pan. Add the asparagus and stir-fry for about 2 minutes. Transfer the asparagus to a plate and set aside.

2. Add the rest of the oil, garlic and shallots to the same wok and fry until fragrant. Add the scallops and cook for another 1 - 2 minutes.

3. Return the asparagus to the wok. Add the fish sauce, black pepper and coconut milk.

4. Stir and cook for another 3 - 4 minutes or until the scallops and asparagus are cooked. Garnish with the coriander leaves.

Heat some olive oil and butter in a pan, add a teaspoon of finely chopped fresh red chilli (without the seeds), a crushed lemon grass stem and half a teaspoon of fresh, finely chopped ginger. Infuse these flavours for about two minutes. Add the scallops and cook for a couple of minutes only (any longer and they become tough). Remove the lemon grass stem.
Serve with a small salad of watercress and sharon fruit - the sweetness of the fruit works perfectly with the chilli hint. Sprinkle with some finely chopped corriander leaves and enjoy.
It is simple but keeps the scallop as the main point of the dish.

First of all, I think the two recipies prior sound great. But, I made this delicious mistake when attempting to create a scallop dish...
1. clean scallops (run under cold water)
2. allow them to dry on a baking sheet
3.sprinkle with olive oil, season with ground pepper and salt
4.quickly sear in a hot pan - the cracked pepper makes a crispy glaze
5. serve over a bed of greens with vinagrette dressing

Good luck, and you can never over-cook a scallop.

DEEP - FAT FRIED SCALLOPS OR OYSTERS

1 lb. fresh or frozen scallops or 1 pt. shucked oysters
1/4 c. all-purpose flour
1/4 tsp. salt
Dash pepper
1 beaten egg
1 tbsp. water
2/3 c. fine dry bread crumbs
Shortening or cooking oil for deep-fat frying

Thaw scallops, if frozen. Drain oysters. Dry scallops or oysters with paper toweling.
Combine flour, salt and pepper. Roll scallops or oysters in flour mixture. Combine egg and water. Dip flour coated seasoned in egg mixture, roll in bread crumbs. In saucepan or deep-fat fryer heat about 2 inches shortening or oil to 365 degrees. Fry scallops or oysters, a few at a time.

In the hot fat for 2-3 minutes or until golden. Drain on paper toweling, keep warm in 325 degree oven while frying remaining scallops or oysters. Serve with lemon or lime wedges, if desired. Makes 4 servings.

Fry for three or four minutes max in butter. Serve with a few leaves of flat leaf watercress and a slice of fried black pudding. (Doesn't sound as good as it tastes!) Try it for yourself before you dismiss the idea. One slice of black pudding surrounded by the watercress with a large or two or three small scallops on top. Classic! They'll wonder where you got the idea from.

They all sound good. I melt a couple Tbsp butter in a hot pan with 1 Tbsp Cajun spice. Then sear them. Sprinkle on another good Tbsp of Cajun. Sear on the other side. It's great with salad, creamy pasta, or just with toothpicks.

I like it wrapped in bacon, held together with toothpick, and sear fried in olive oil and butter...

Put them on a plate, using toothpick to pick them up and dip them, and serve with your favorite dipping sauce. It may sound disgusting to some, but i personally like ranch dressing.
