i know they tend to use mozzarella cheese. sometimes provolone, or cheddar, or some kind of mix of the three. but i'm looking for specific brands. if anyone out there works at one, i'd be thankful for the help!

I don't know of a specific brand - the brands I see in restaurant supply stores vary.

My recommendation is to use Whole Milk Mozzarella instead of the skim milk mozz. You get a richer flavor from the whole milk stuff.

There are several different grades. Usually pizzerias purchase the cheapest money can buy!
Yes, whole milk is creamier. I like mixed cheeses.

In Saint Louis Missouri, our famous pizza pies are made with Provel. Its a local cheese product like provelone, but melts better (gooey) and has a nice smoked flavor.
