What is the best way to keep a pie? Should I leave it out in the counter or should I keep it in the refrigerator or freezer? I get confused because grocery stores keep them in all three places. What's the best?

I do not have any vegan margarine, and I know applesauce can work in place of it. I do have applesauce, and canola oil (if that would work better). Here's the recipe I am using:
3/4 cup vegan margarine (try Earth Balance brand)
1/2 cup sugar
1 cup firmly packed fresh brown sugar
1 tsp. vanilla
1/2 cup soy milk
1 cup flour
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1 cup chopped walnuts
1 cup raisins
3 cups rolled oats

i tried to bake chicken in the oven last nite , with foil but didnt cover it as it takes too long, the thing is when i took the chicken out 25 mins later it was like rubber!! how can i make nice baked chicken?
