I poach them in a non-stick pan in simmering water, but sometimes they stick to the bottom of the pan so when I remove them the yolk oozes out.

Your water might not be deep enough. Also, add a teaspoon of vinegarto the water. This will help keep the white of the eggs from spreading out too far in the water.

what i use is a small ramekin cup to poach my eggs in I add some butter to the cup let it melt then add the egg and poach to my likeness and eat it has never stuck . if you're poaching in a pan of water for a other reason like eggs Benedict then try adding some vinegar to the water and the water has to be simmering really well be for you add the egg and you need to watch it .

Add a spoon of vinegar to the water. Maybe your pan is too hot.

I use an egg poacher pan and put a little butter in the egg cups.
