Baked Macaroni and Cheese
24 ounces macaroni
1/2 cup butter
1/2 cup flour
4 cups milk
16 ounces Velveeta cheese (sometimes I use even more)
1 pinch white pepper or black pepper
1-2 cup shredded cheddar cheese
Preheat oven to 350 degrees Fahrenheit.
Prepare macaroni according to package directions.
Melt butter in a large pan.
Whisk flour into melted butter to create a light roux (paste).
Slowly whisk milk into the roux, whisking constantly to avoid lumps.
Allow milk and roux to heat for about one minute, then begin adding the Velveeta.
Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper.
After macaroni has cooked, drain the water from the pot and mix in the cheese sauce.
Once the macaroni and sauce are mixed together, tranfer to a 9 x 13 baking dish.
Cook uncovered for 25-30 minutes or until bubbly.
Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is throughly melted.
Remove from oven and allow to cool for 5 to 10 minutes before serving.

There are really only a few ingredients in mac and cheese anyway so why make that awful stuff from a box. Cook your macaroni. Start making layers in a casserole. Macaroni, some dots of butter and salt and pepper, followed by grated cheddar cheese. Do this two or three times ending with cheese. Pour milk about 2/3 the way up the casserole and bake till the liquid is gone. Absolute comfort food if ever there was any.

Boxed? Oh No! I started cooking when I was about 8, and have the burns up and down my arms to prove it, so...since i don't know your age/cooking experience...I'd say,
you may believe the boxed kind is easier, just because it's in a box, right?...
The thing that makes baked macaroni and cheese so much better is that you use real cheese (instead of the powdered, processed cheese in the box) If you use the boxed macaroni, and then use real cheese, to make it baked, using the boxed doesnt make any sense, cuz you're only using that funny tube shaped macaroni, and thats it....
now, if you're young and/or inexperienced with using an oven, or are tottttalllllly in love with the powdered cheese, here's what you do:
Make 3 boxes as the instructions direct, drain all the water, stir in 1 tablespoon of margarine, while it's still hot, and only use 3 tablespoons of milk to moisten the powdered cheese, mix in some cottage cheese, layer macaroni and shredded cheese in a glass baking dish, topping it off with a thicker layer of shredded cheese, bake it in a preheated oven (300 degrees) until the cheese is slightly brown on top...and you're done, after only adding shredded cheese and cottage cheese!....Bon Appetite and Happy Thanksgiving!

Why ruin a good mac and cheese by using the boxed stuff? Cook regular macaroni, melt cheese with a bit of milk to keep it from being too thick. Mix all together, put in a greased casserole dish, sprinkle bread crumbs on top. Bake at 350 for 30 - 45 minutes.
