can anyone give me a good, fast recipe for dairy free icing/frosting... no milk, or butter please!

I ate sunflower spread that expired in November. Am I gonna be ok? will I live? will it give me a disease?
what will happen....
PS>There's still loads left but I don't intend to throw it away until it looks or smells bad...I think it's the supermarkets tricks to get us to buy new things with all this expiry dates. What did people do in the old ages when there was no expiry dates?

My fiancee made a make ahead casserole that called for grated potatoes yesterday. Now she is ready to cook it and the grated potatos have turned brown. Now, I understand why this happens - an acid oxidizes the potatos and makes them discolor... But are the potatoes still safe to eat?

Note, it has been 24 hours, completely refrigerated right after it was made.
