All of the above! Carol's answer is also correct. Vinegar retards the molding process of cheese. We used to use this "trick" in the deli.

By the way, did you know that cheese is best eaten at room temperature?

dont worry about the mould, just remove it before eating. Some cheeses are months old before u get them anyway, it all improves the flavour.
On the other hand breed mice they will eat it for u
