Like all fats, olive oil is a delicate product. Like many natural products, olive oil passes through a series of life stages. Newly
pressed extra virgin olive oil is often not well balanced and can be aggressive and disorganized in aroma and flavor. It stabilizes about a month after production, acquiring harmony and its own special character. Month-old oil is at its peak, from then on it gradually loses aroma and intensity. After two years it is flat and tired and should be thrown away.
Before you bring olive oil home, pay attention to where it has been shelved in the store. Make sure it is stored in cans or tinted glass bottles and pass on those stored under bright lights or close to window. Look for the harvest and expiration date.

Olive oil never goes bad- if you have good olive oil. If you buy some crappy stuff, then it may start to get a thin film on the top. But as long as you buy the good stuff, you could pass it along to your kids.

Olive oil will last a very long time. I don't think it goes bad. I have had a bottle for at least a year now. I don't use it often so I always buy small bottles.

A bottle of olive oil should be used within 2 months of opening, as, once open, it begins to oxidize, losing freshness. Olive Oil is a fresh product and does not benefit from aging.

I think it stays good for a long time. But even a normal sized bottle is gone within 3 weeks. I use it for 95% of everything!

Rule of thumb - if it doesn't have a "use by" date and it doesn't look or smell bad, then you can use it
