Coconut Pecan Frosting
1/2 cup vegan margarine (Smart Balance)
3/4 cup sugar
1 1/2 cups shredded coconut
1 cup pecans
1/2 cup soy milk (or coconut milk)
1 teaspoon vanilla
Boil together all ingredients in a medium to large saucepan over medium-high heat for 12 minutes, stirring constantly with a wooden (or plastic) spoon.
Pour then spread on cake while frosting is still warm.
Let set up for a few minutes before serving (sets up faster if you cover it and place it in the fridge).

Jelly Frosting (not vegan)
Very creamy in spite of the fact that it has no dairy.
1 egg white
1/2 cup jelly
Mix egg white and jelly in a metal bowl set over simmering water. Beat steadily with a rotarty or electric beater until the mixture is stiff--about 3 to 5 minutes. You will have enough to frost an 8-inch two layer cake or 24 cupcakes.
Really good:
5 TBSP vegan margarine
5 TBSP confectioners sugar
3 TBSP jam or jelly (which is almost always vegan; pectin comes from apples--I had to look that up recently and thought I'd share)
Combine in a small bowl and beat until smooth. Makes about 2/3 a cup.
Seven-Minute Frosting (not vegan):
Very sweet and very fluffy.
3/4 c. sugar
1/2 tsp. cream of tartar
pinch of salt
2 egg whites
1/4 c. cold water
2 tsp. vanilla extract
Combine the sugar, cream of tartar, salt, egg whites and water in a mixing bowl of at least 2-quart capacity or the top of a large double boiler. Set over simmering, not boiling, water on low heat. Beat w/ a rotary or electric hand beater until the frosting stands in peaks, about 5 to 7 minutes. Remove from the water and continue beating for a few minutes, to stiffen the frsoting a bit more; it should stand in smooth, billowy peaks. Beat in the vanilla. You will have enough to generously fill and frost and 8- or 9-inch two-layer cake or a 9- or 10- inch tube cake. Swirl the back of a spoon all over the frosted cake for a pretty finish.
7-minute vairations: Substitute 3/4 c. brown sugar for the granulated sugar for caramel frsoting
Stire 3/4 cup shredded coconut into finished frosting
After removing from heat, before final beating, add 1 TBSP powdered instant coffee

dairy free chocolate glaze
melt a desired amount of chocolat on a double boiler
add a little bit of water to thin it out
also add a small lump of shortening if u have it
like crisco
add powdered sugar to taste and stir
add a pinch of salt which will
get rid of icing often too sweet taste
pour over ur cake
or dip ur cupcakes in it
once it is set, sift powdered sugar on top for a dramatic look

Very easy.
1 cup sugar
1/4 teaspoon cream of tartar
1 egg white
1/3 cup boiling water
Mix all ingredients together, adding boiling water last.
Beat on high for 6-10 minutes until frosting forms peaks.

7 min Frosting it so good
11/2 cups sugar
2 egg whites
1/3 cup water
1/4 tsp. cream of tartar
1 tsp. vanilla extract
In a heay saucepan or double boiler, combine sugar, egg whites, water and cream of tartar. With a portabel mixer beat on low speed for 1 minute, continute beating until frosting reaches 160°F, about 8-10 min. Pour into a large mixing bowl; add vanilla. Beat on high speed until frosting forms stiff peaks, about 7 min.
Yields: 5 cups

1/2 cup shortening
3 cups powdered sugar
1/3 cup soy milk.
1 tsp vanilla.
Melt the shortening, and add the sugar and soymilk alternately, while beating at medium speed. Add 2/3 cup cocoa powder to the shortening to make it chocolate, if you want chocolate.
It's not quite as tasty, but it will do. :)
