My fiancee made a make ahead casserole that called for grated potatoes yesterday. Now she is ready to cook it and the grated potatos have turned brown. Now, I understand why this happens - an acid oxidizes the potatos and makes them discolor... But are the potatoes still safe to eat?

Note, it has been 24 hours, completely refrigerated right after it was made.

Perfectly safe. Though the casserole may be a little darker than expected.

yea it wont hurt you one bit but try this to refresh them,

put them in a bowl of ice water with a tsp of lemon juice. This might perk them up a little. Justy be sure to put them between towels and ru=ing them out well before using in the recipe.
Next time do the same thing to keep them looking white

Cook as normal, then give yr fiancee her portion first,if she doesnt go into a coma within 10 minutes then u can safely eat yrs

they are still ok next time put them in water and a tablespoon of lemon juice first( thats how you keep apples & banana's from turning for a recipes! oh yea if you don't like the way they look cover them with a little cheese of some kind
