Potatoes, rice, oats, cereal, olive oil, spices, sugar, tea, hot chocolate mix, crackers, veggie boullion, rice noodles, lentils, dried fruit or raisins. Apples last a few days at least without refrigeration, as do oranges. Ditto on bananas and tomatoes. Peanut butter can keep for a while unrefrigerated, although that's no longer recommended.
Single serve juice boxes/tetra packs. Look for milk, or soy milk.
No fridge means no cheese. Except for some fancy cheeses. I have a lovely tin of Camembert at home.
If you can get to a bulk food store, they often have loads of dried foods.

A wrench--helpful for changing the height of dorm beds. A good box fan--especially if the dorm/apartment is without air conditioning (as my dorm was!) Sharpie markers--make sure anything that can disappear (read: get stolen) is labeled with her name. I'm serious--towels, even food. College students can be sneaky. Plastic dishes--cups, paper plates, plastic forks, knives and spoons. I hated doing dishes my freshman year, and would just throw stuff away to avoid doing it. Wal-Mart, or the Dollar Store usually has cheap stuff that can be thrown away. Quarters for laundry, unless she has an actual washer and dryer. Hangers--I never had enough! Flip-flops for the shower, if she's using a community bathroom. Never, ever go in one barefoot.
