I want to make cheese spread for sandwiches, but I don't have a food grinder. What can I do? Do you think I could just grate the cheese? I think cheese spread is supposed to be smooth, so will this make the cheese pieces too large...Help!!!

I keep it in a covered dish in my pantry (to keep it soft). I have done this forever (...just like grandma did!) and have never had any problems with illness, but my FIL insists that I refrigerate it because it is a dairy product. Who is right??? Grandma or my FIL?

I really enjoy drinking the Chai Tea Latte from Starbucks, and noticed that they have other flavors of Latte for Christmas such as Eggnog and Pumkin pie (or something pumpkin), but I don't like coffee at all, and I was wondering if these had any flavors of coffee in them, or if they didn't? I've eaten tails in restaurants where the meat has expanded over the top of the shell. I know how to cook a tail, just don't know how to make the meat poof up. Do I unattach everything except the end of the tail and lay it on top of the shell? What cooking method do I use to achieve this?
