I've eaten tails in restaurants where the meat has expanded over the top of the shell. I know how to cook a tail, just don't know how to make the meat poof up. Do I unattach everything except the end of the tail and lay it on top of the shell? What cooking method do I use to achieve this?

Cut the tail shell length wise,lift the tail meat out,leaving only the small end inside the shell....,baste with butter,and broil for no more than 5 min,or until golden on top....baste again,sprinkle with parsley ....serve hot...(DO not over cook...makes it tough..)

they cut the lobster tail and pull the meat thru then cook it
