I really don't know how to cook but I am hosting a dinner at my place in two weeks, and I still don't have a clue of what to cook for them. It is about 30 adults and 10 kids all hispanic. Based on past studies and reports, I have decided to cut out red meat and pork from my diet, at least for now. I ate alot of red meat and I know that many pounds stay undigested within the body for several years. I'm not keen on becoming a full-fledged vegetarian, but I have stopped eating red meat within the past 2 weeks and have eaten just fish and chicken. I do feel alot better, but I think about having a steak or a burger once in a while. Pork is out of the question because it never really made me feel that great after eating it and it usually has a 'not-so-pleasant' smell to it. I don't even eat hot dogs or bologna. Once I cleanse my body of the remaining red meat, is it safe to eat it once in a while or just not at all?

I bought a dry 15-bean mix for soup today. I usually do the quick-soak method, but I thought I'd heard somewhere that if you do them in the crockpot for like 8 hours you don't need to soak or quick-soak them. Can I just put the dry beans in the crockpot or do I need to quick-soak them? Thanks.

I've seen a few recipes lately that use pumpkins for savory dishes but they don't say what type or variety of pumpkin to use. Like pumpkin pie pumpkins or Jack o'Lantern pumpkins. There's a difference, isn't there? I was thinking of trying a recipe I saw on Emeril's Halloween Contest; he made a stew and baked it in a pumpkin. I also saw Michael Chiarello(?) do a risotto (though it was actually made with pasta instead of rice) and he baked a pumpkin and served the risotto in the pumpkin. Any ideas?

Me and my roommate have had this ongoing argument about how long milk last after it has been open. I (and all of our friends) say its good till the expiration date, he says that it will only last about three days after you open it no matter when it expires, then he tries throwing it away. In which I usually stop him and use it until its gone (without ever getting sick). I hope this will help settle this once and for all. Thanks.

How do i keep the jerky from sticking to the drying racks?? Someone told me if you use a non-stick spray it will ruin the flavor! Is this true? If i use wax paper, won't it just stick to that?
