I've seen a few recipes lately that use pumpkins for savory dishes but they don't say what type or variety of pumpkin to use. Like pumpkin pie pumpkins or Jack o'Lantern pumpkins. There's a difference, isn't there? I was thinking of trying a recipe I saw on Emeril's Halloween Contest; he made a stew and baked it in a pumpkin. I also saw Michael Chiarello(?) do a risotto (though it was actually made with pasta instead of rice) and he baked a pumpkin and served the risotto in the pumpkin. Any ideas?

Well, the pumpkin pie pumpkins have the best flavor, so unless you're going to be using the pumpkin as part of the display, I'd use one of those. The difference between the two are that the pumpkin pie pumpkins generally aren't waxed on the outside, and are a duller orange. The jack o lantern pumpkins are bright orange and are shiny. I've seen a couple things where the chefs use the pumpkin as the bowl for the soup. Those are so cute! In that case, you might would want to use one of the jack o lantern pumpkins... The jack o lantern pumpkins also tend to have stringy "meat".

Yes, usually a cooking pumpkin is smaller and meatier than a Jack O' Lantern pumpkin....but we have in my family the tradition of baking the Halloween pumpkin into a pie for thanksgiving.

You will carve the pumpkin and use a flashlight inside for the light - not a candle. When the last trick or treater is gone - wash the pumpkin, cover it and put it in the fridge - you may have to cut it down but try to leave it in big pieces.

Also, there is a great pumpkin soup they make in Barbados. It is made with a chicken stock base and lots of chili peppers.

Cover the pumpkin in aluminum foil and bake it at about 300 degrees for about an hour and a half or until tender - leave the peel on the pumpkin when you bake it. Take the package out of the oven and cool. Take off the peel with your fingers and put the remaining flesh through a sieve - I used a metal mesh colander and I press the pumpkin through it. Put in a plastic container and freeze until you want to make the pumpkin pie. Use you fave recipe for pumpkin pie - I like to add lots of spices and a few spoons of brandy or rum to my pie filling - also I use heavy cream in my pies - not milk.

I use pumpkin alot especially around this time of year as they are easier to come by.

When ever I use pumpkin to cook with I always use the small pumpkins commonly referred to as the pie pumpkins, you can use them as the serving dish and use the meat out of the pumpkins so everything is used and nothing wasted. we also use the seeds, either saving to plant or roasting and eating.

I have a very simple recipie to cook pumpkin. It is an Eastern recipie and I hope you will like it,
Ingridients: Pumpkin, halfpound
Onion , 1 small
Salt , according to tast
Black Pepper, 2or 3 pieces
Oil , 1 tablespoon
Cut pumpkin in small pieces, cut onion, heat oil in a saucepan, and fry the onion until golden brown, add pumpkin, salt,and pepper and add a little water. Cook until pumpkin become soft and water dries.Serve hot with bread.

i have been telling people who keep asking for ideas about how to serve pumpkin soup in pumpkins but no one seemed interested ...just get the little ones...i am sure you have seen them ..they are just a little large than a large bowl they work great...and you can serve soup in them also...use the pumpkin that you remove for the soup.....i did one year a large pumpkin as a soup terrine and the little ones as bowls served on a large tray with soup in center and bowls around...just another thing you can also use a magic marker and make cool faces if you are artisic i wasnt to much impressed with the stew recipe....almost like hamburger helper.....

The pumpkin stew recipe ! I have that one and it's a classic,truely amazing dish to bring to the table. You can use any edible pumpkin for that dish. another great idea..is using a hollowed out pumpkin for your hot apple cider ! OH MY GOD ! delightful and when my guests seen me pulling nice hot apple cider out of the pumpkin they all cheered ! keep the top for a lid it really help keep the heat in, I had mine outside it stayed far warmer 'hot infact' then my hot chocolate in a thermos !

That's a matter of choice. You will need to experiment and see what works best for you. Different varieties but just mostly a matter of taste!
