This is probably a bit late, but here is some idiot-proof pizza.
1 Before you start put the oven on a low temparature, approx
gas mark 3
2 Put a chappatti or tortilla on a heat-proof plate. Top with
tomato sauce, and any pizza toppings of your choice.
3 Cover with grated cheddar cheese and grill for approx 5 minutes until
the cheese has melted.
4 Put the Pizza (on the plate) in the oven to keep it warm.
(Remember to use oven gloves because the plate will be
hot)
5 Repeat steps 1-3 for your Pizza.
You could serve it with a nice salad. Buy a mixed salad from the supermarket, plus some coleslaw, potato salad, croutons etc. If you are really adventurous you could even get some garlic bread to go with it.

Biggest key is not burning anything--and the key to that is temperature control. Preheat the pan, oven, or whatever you are cooking in, don't use too high a temperature (medium heat is for most anything except boiling water). If you don't burn it, it'll be pretty good.
If you take a decent steak, put some Montreal Steak Seasoning on it (you could try to get creative with your own spice combos in the future) fry it or put it on the grill, it'll come out good. (Getting it to come out great takes some practice, and is a matter of taste--you have to know what she likes). Bake a potato with it (350F until soft-could take 45 mins to an hour for a pair of big potatos), and make a salad. You need one more side--heating up a canned vegetable would work, and you may want to add some bread from a can, like biscuits, crescent rolls or something. (You could do these homeade with the recipie on the flour package, but it might be too stressful to try if you aren't used to cooking a lot of things at once.)

ahh thats sweet try this:
Grilled vegetable pasta (serves two)
Ingredients
One small red onion
One yellow pepper
One courgette
100g/4 ounces dried pasta such as fusilli
Vegetable oil (olive oil is nicest)
Mixed herbs
Grated cheese
Optional: drained canned kidney beans or tuna, or cooked bacon
Instructions
1. Slice the onion thinly, about 0.5 cm thick. Cut the pepper and courgettes into 1cm thick slices and mix with the onion in a bowl 2 tsp of oil.
2. Arrange vegetables on a grill pan and cook under a hot grill for about six minutes, then turn them over and cook for another 6 minutes or so.
3. While the veggies are under the grill, cook dried pasta in plenty of boiling water according to instructions on the packet.
4. Drain pasta and mix with the cooked vegetables and herbs. At this point you may want to add optional extras like beans or tinned fish.
5. Serve topped with cheese.

LEMON CHICKEN
SERVES 2
PREPARATION 10 MINS
COOKING 20 MINS
2 chicken breasts, skin removed
6 slices Parma ham
2tbsp olive oil
1 lemon, quartered
6-8 cherry tomatoes
1. Heat the oven to 220°C (gas mark 7). Wrap each chicken breast in the Parma ham, brush lightly with a little of the olive oil and season with salt and freshly ground black pepper.
2. Heat the remaining olive oil in a large frying pan over a medium heat, add the chicken breasts, lemon quarters and cherry tomatoes and sear for 3-4 minutes, turning once, until the chicken is golden and the lemons are just coloured.
3. If the frying pan has a heatproof handle, transfer it to the oven; otherwise, transfer the chicken, lemon quarters and tomatoes to a heatproof dish and place in the oven.
4. Bake for 15 minutes, or until the chicken is cooked and golden. Serve immediately with a green salad or steamed vegetables.

I have a very simple baked chicken and mashed potatoes recipe that is tasty and good for beginning cooks. Take split chicken breasts (with the skin) and place in a shallow bake pan. Pour a little melted butter or margarine over the top. Then season with salt, pepper, garlic powder, italian seasoning, and paprika. I use alot of paprika because it gives a good color and nice flavor without being too spicy. The paprika should almost cover the chicken. Bake in a 400 degree oven for about 40-45 minutes. For moist chicken, you might want to soak in a brine for about 2 hours. Just add about a 1/2 cup sea salt or kosher salt to cold water just enough to cover the chicken and refrigerate. For the potatoes, the best to use are the red potatoes. Just peel and boil until fork tender. Smash them up with potato masher and add warm milk, butter or margarine, salt and pepper to taste and whisk until creamy. Add the milk and butter slowly and taste. Add more butter, milk, salt, or pepper until desired taste. You can use any vegetable, but frozen spinach goes well with this. Just follow the directions on the package. I hope that is simple enough for you. Not much too it.

Some simple things that are tasty:
Pick up a couple of nice T-bone steaks. Broil them. Baked Potatoes are easy, just wash, wrap in foil and bake in the oven for about an hour.
A fresh salad and rolls to complete. You can cheat on the desert. Buy a pie, cake from the bakery or ice cream, whatever you like.
Another nice tasty dinner is fondue.. You can buy the fondue cheese, and toast the bread and have chocolate fondue w/ fresh fruit for desert. It's very simple and very tasty. Add a nice wine and that's it.

Progresso French Onion Soup, slice a piece of bread from slim Italian bread, cut a nice piece of mozarella cheese; make individual bowls, soup, then bread in the middle with the cheese on top, broil until a crusty brown. Buy a mixed lettuce bag, throw the lettuce in small bowl and serve as a side dish.

One-Pan Pasta and Meatballs
1 cup water
1 jar (26 to 28 ounces) tomato pasta sauce, (any variety)
1 1/2 cups uncooked elbow macaroni
20 frozen fully cooked Italian-flavor or regular meatballs, 1 inch in diameter
1 can (2 1/4 ounces) sliced ripe olives, drained

Chicken. Cant go wrong with chicken. Unless you dont cook it properly, then you'll poison her. On the other hand, dont cook chicken.
Stir Fry. By far the easiest thing to cook, because it's so forgiving. You're meant to stir for, say, 5 minutes, but if you stir for 20 it's still not ruined! Brilliant... Failing that, Burger King!

preheat your oven to 350 degrees in a bowl combine plain old salt & pepper 2 Tablespoons of each with 1 cup of flour spray your pan with "PAM Cooking spray" Ok take chicken legs and cover them really good with the flour. put them in the oven for a half hour then turn once and cook for an additional 1/2 hour. in another pan dice up 3-4 potatoesand cook them for about 1/2 hour you want to dump the diced potatoes into a ziplock baggie with about 2 tablespoons of lawry season salt & 1/2 of a cup of Vegetable oil. Then dump out on the pan and cook in oven for the final 1/2 hour of the chicken's cooking. it's yummy.
***Note to make the chicken oven fried spread vege oil in the bottom of the pan***

Steak and jacket potatoes.
Chop an onion and a clove of garlic, and fry in a pan with the steaks.
Stab a couple of potatoes (in their jackets) wrap in kitchen paper and microwave for 10 mins, then wrap in tin foil, add a bit of olive oil and salt and oven bake for about 30 mins (turning once)
Serve with some colslaw and a bottle of red wine.
