A classic Yorkshire ginger cake - a perfect accompaniment with a cup of tea.
Ingredients
225g/8oz self raising flour
110g/4oz caster sugar
1 tsp ground ginger
1 tsp bicarbonate of soda
1 egg
200ml/7fl oz milk
55g/2oz butter
110g/4oz golden syrup
Method
1. Preheat the oven to 150C/300F/Gas 2. Line a 22cm/8in tin.
2. Sieve the flour, sugar, ginger and bicarbonate of soda into a large bowl.
3. In a small pan gently heat the butter and syrup until melted.
4. Beat the egg into the milk.
5. Gradually pour the butter and syrup into the flour and stir. The mixture will be thick.
6. Pour in the egg and milk and stir until smooth and pour into the lined tin.
7. Bake for 1 hour

110g (4oz) Black Treacle
110g 4oz Sugar
1 Egg, beaten
4 tsp Ground Ginger
1 tsp Ground Cinnamon (optional)
1 tsp Bicarbonate of Soda
Pinch Salt
Pre-heat oven to 170°C: 325°F: Gas 3.
Grease and line a square baking tin with buttered greaseproof paper.
Sieve the flour, bicarbonate of soda, ginger, salt and cinnamon (if used).
Add the oats and sugar, mix lightly.
Gently rub in the lard or margarine.
Stir in the beaten egg.
Gently warm the syrup and treacle, so that they can be easily poured.
Make a well in the centre of the mixture and add the syrup and treacle.
Mix thoroughly.
Pour the mixture into the prepared baking tin.
Bake for 45-60 minutes or until firm and cooked.
Allow to cool for at 15-20 minutes before removing from the tin.
Cut into squares, keep in an airtight tin for 24 hours before serving.

This is the recipe which has been handed down the family (Lancs and Yorks) for years and served on bonfire night.
It is slightly different from the entries above but is very effective. My children who have left home ask me to make the Parkin and post it to them, and I never fail.
225g/ 8oz plain flour
1/2 a level teaspoon salt
1level teaspoon EACH mixed spice,cinnamon and ground ginger
1 level teaspoon bicarbonate of soda
225g/8oz medium oatmeal
175g/6oz black treacle
150g/5oz butter
100g/4oz soft brown sugar
150g/1/4 pint of milk
one standard egg beaten
Prepare and oil18cm/7in square tin
Sift flour, salt spice, cinnamon, ground ginger and bicarb of soda into a bowl.Add oatmeal. Make well in centre
Put treacle,butter, sugar, milk into saucepan.Stir until butter has melted
Pour into well and add egg.Stir mixture briskly, without beating, until soft, smooth and evenly combined
Transfer to prepared tin. Bake in centre of moderate oven(180c or 350F) for one hour or until cocktail stick, inserted in centre comes out clean
Allow to cool.
It says you should keep it for a week in an airtight tin with a cut apple to allow it to draw moisture but generally it is eaten before it has the chance...

1/4 lb. butter
1 tbsp. milk
1/2 oz. Ginger
Rub butter into oatmeal, add ginger and sugar.
Melt treacle.
Dissolve soda in milk.
Mix everything together.
Line baking tin with well greased paper and pour in mixture.
Bake in a low to moderate oven for 1/2 - 3/4 hour.
