My personal favorite is a Tight snatch.
1 1/2 oz. light rum,
1 oz. peach schnapps,
Fill with pineapple juice,
Stir in highball glass.

In shot bars you normally don't have people ordering cocktails. Tennessee Whiskey is the edge on favorite in this area as is Bourbon. You'll find the answer varies depending on the locale.
For cocktails Blue Valium is a local favorite as is Alabama Slammer and a local drink with unknown ingredients called Smash. I've been trying Blue Whale lately but my favorite is the classic Mojito i recommend you take a spin by http://www.idrink.com they have a list of top ten drinks and ten least favorite drinks.

i own a nightclub and here are our most ordered...
shots - soco lime, anything with jager (straight, bombs, etc), and cherry bombs
drinks - anything made with red bull, jack and coke, bacardi and coke
