anything i could add to corn syrup to make it dark corn syrup?

In a pinch, a small amount of molasses or even maple syrup will work. Or mix brown sugar with corn syrup.

Often dark corn syrup is just used for color and not additional flavor. You might try you recipe with light corn syrup if that is all you have.

corn syrup
A thick sweet syrup which comes in both light and dark varieties, made from processed cornstarch. Light corn syrup has been clarified, while dark corn syrup has had coloring and caramel flavoring added.


Season: available year-round

Substitutions: 1/2 cup sugar + 2 tbsp water = 1/2 cup light corn syrup; 1/2 cup honey = 1/2 cup light corn syrup

I'm not sure what the difference is - maybe molasses...
But I do know if you're making a pecan pie, for example, you can use either and the difference is negligible.

a bit of molasses? ... unless you have some caramel coloring.
