I bought the Storage Mate canister looking plastic containers for my Sugar, Flour, All Purpose Flour, Powered Sugar and Brown Sugar. I am a big baker.

I have labeled them and put the date of purchase on each canister so that I will know if I need to replace as I bake seasonally.

My question is today, I had done some baking and used up the sugar and flour. I was in a hurry and did not wash the canisters before adding the new in. Is that a problem? Do I need to rewash them before I add the fresh in?

Just curous.

There is nothing like a fresh baked cookie right out of the oven. I usually make a big batch, but I'd rather bake them in smaller amounts over the course of a few weeks. Can I store my leftover cookie dough in the fridge/freezer in an airtight container? How long will it stay fresh?

Some of them floated immediately to the top and now taht we're eating them, some of them have "soft" heads - as though there's a lot of space between the innards and the shell of the head. Are these ok to eat?
