I have a great mexiacan shop close by so it would be cool to do something mexicanny...something not too spicy

Taco Crisps

Buy as many boxes of trisquit crackers as you think you will need, depending on how many people you want to feed.

On a cookie sheet, place the crackers, fill it up, the crackers do not need to be any distance apart
On each cracker put a slice of cheese the same size as the cracker, use cheddar, gouda, mozzarela, American, jack, any good melting cheese you like. You can use 2 or 3 different cheeses, and place them randomly if you wish.
On some of the crackers put a small ammount of refried beans from the can, or all of them if you wish, but you might like a variey.
Every cracker needs 1 sliced, pickled jalepeno (buy a jar of them in the grocery store)
Add a small cut up piece of tomato to each cracker (this keeps them moist, as the cracker is dry.)
If you like, you can add a slice of olive as well, it will look pretty, either green or black or both.
Bake in the oven at 350 for about 10 minutes, or until the cheese is melted. Your Taco Crisps will be a hit, and if you want, you can bring a side of sour cream if your party friends would like to top them.

There is a mexican salad which you layer everything in a large glass dish. You put in the hamburger with taco seasooning cooked with it in a layer then add the onions, lettuce, sour cream, and whatever you want in layers until it's full Don't forget the cheese on top too. The taco shells must be crumbled up or use Doritos, up to you. Have fun.

Mexican Pizza

1 Pkg Flour tortillas
Oil for frying

Cut each tortilla into six wedges and fry until golden. Drain excess oil.

Saute ground round 1/2lb is enough
dice ripe tomatoes (I like to slice grape tomatoes they're sooo sweet)
1 small can of black olives sliced
1/4 C diced onion of your choice
jalapenos if you like
1 can re-fried beans (optional)
2C bag of sharp cheddar cheese grated (or cheese of your choice)
Once the tortillas are fried and ground beef drained, put a sparse layer of chips on a pizza pan. sprinkle all ingredients over the chips. If you want to add the re-fried beans you have to spread each chip with beans you can use a butter knife.
Sprinkle a generous amount of cheese over that layer. Make another layer of chips and follow with the toppings and continue until you have a nice mound of chips.
Place in a 350 oven until cheese is melted.
Serve right away.

Taqueria Style Tacos - Carne Asada

INGREDIENTS
3 pounds flank steak
1/3 cup white vinegar
1/2 cup soy sauce
4 cloves garlic, minced
2 limes, juiced
1/2 cup olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika

1 white onion, chopped
1/2 cup chopped fresh cilantro
1 lime, juiced

2 large tomatoes, chopped
2 jalapeno peppers, chopped
1 white onion, quartered
4 cloves garlic, peeled
4 dried New Mexico chile pods
1 pinch salt and pepper to taste

1 (32 ounce) package corn tortillas
2 cups grated cotija cheese
2 limes, cut into wedges
DIRECTIONS
Lay the flank steak in a large glass baking dish. In a medium bowl, whisk together the vinegar, soy sauce, 4 cloves of garlic, juice of two limes, and olive oil. Season with salt, black pepper, white pepper, garlic powder, chili powder, oregano, cumin and paprika. Whisk until well blended, then pour over the steak in the dish. Turn over once to coat both sides. Cover with plastic wrap, and marinate for 1 to 8 hours.
In a small bowl, stir together 1 chopped white onion, cilantro, and the juice of 1 lime. Set aside to use as a relish for the tacos.
Heat a skillet over medium-high heat. Toast chile pods in the skillet for a few minutes, then remove to a bowl of water to soak for about 30 minutes. Preheat the oven to 450 degrees F (230 degrees C).
Place the tomatoes, 1 onion, jalapenos, and 4 cloves of garlic onto a baking sheet. Roast in the oven for about 20 minutes, until toasted but not burnt. Place the roasted vegetables, and soaked chile pods into a blender or food processor, along with salt and pepper. Puree until smooth.
Heat vegetable oil in a large skillet over medium-high heat. Cut the marinated flank steak into cubes or strips. Cook, stirring constantly, until the meat is cooked through and most of the liquid has evaporated.
Warm the tortillas in a skillet for about a minute on each side to make them pliable. Tortillas may also be warmed in a microwave oven. Arrange two or three tortillas on a plate, and lay a generous amount of beef over them. Top with a sprinkle of the onion relish and a large spoonful of the pureed salsa. Add as much cheese as you like. Garnish with lime wedges, and serve.

Mexican Chocolate Cookies


INGREDIENTS
1 cup butter, softened
1/3 cup confectioners' sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 cup ground pecans
1/2 cup German sweet chocolate, grated
3/4 teaspoon ground cinnamon
1 pinch salt
1/2 cup confectioners' sugar
1/4 cup German sweet chocolate, grated
DIRECTIONS
In a large bowl, cream the butter and 1/3 cup confectioner's sugar until light and fluffy. Add the vanilla extract.
In a separate bowl, combine the flour, ground pecans, 1/2 cup ground chocolate, cinnamon and salt; mix well.
Gradually add the dry ingredients to the creamed mixture.
Wrap dough in plastic wrap and chill 1 to 2 hours, or until firm.
Preheat oven to 325 degrees F (180 degrees C).
Shape the dough into 1-inch balls. Place balls 1 inch apart on an ungreased baking sheet. Bake 15 to 18 minutes, or until the cookies are firm to the touch. Cool 1 minute on the baking sheet, then transfer to a wire rack.
For the coating, sift 1/2 cup of the confectioner's sugar and 1/4 cup of the ground cocoa into a shallow bowl. While cookies are still warm, roll them in the coating.



Fruit Pizza

"A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries."

1 (8 ounce) package cream cheese
1/2 cup white sugar
2 teaspoons vanilla extract



DIRECTIONS:
Preheat oven to 350 degrees
In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
Arrange desired fruit on top of filling, and chill.
