its queso blanco -- for best results find a store that sells mexican cheeses don't use monterey jack -- that just nasty. Crema is mexican sour cream. American sour cream is not the same!

16 oz Asadero cubed
1/2 poblano pepper, seeded, diced
1/2 red bell pepper, seeded, diced
1-2 serrano peppers, seeded,diced
1/2 very small onion, finely chopped
2 teaspoons cumin
1/2 cup crema

In a double boiler or crock pot stir all ingredients except crema until cheese is melted. Immediately before serving stir in crema.

Queso Blanco

1 c Asadero cheese; shredded
4 oz Jalapenos, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt

Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.

(If this is made with julienned poblanos, it's called
"queso con rajas de chile").
