Do you think that evolution is heading towards a peak of perfection or will just keep going?

My 2 year old son is showing all the signs of being physically ready to come out of nappies. (Tells me before he goes, fetches clean nappies when he wants to be changed etc, can hold his wee if not wearing a nappy)
My problem is that I don't think he's mentally ready because even though I've tried every trick in the book to get him to 'go' in the toilet/potty - eg sticker chart, ping pong ball in the loo, novelty soap to wash hands - he is very reluctant. On the odd occasion that he's gone on the potty I've gone OTT with praise and any accidents he has are ignored and no attention is drawn to it. This morning he sat on the potty for 30 minutes then got up, started hopping about and fetched me a nappy because he needed to wee. I asked him if he would do it in the potty and he said he didn't want to so I left the nappy off in the hope that he would just give in and sit on the potty, but instead he weed on the floor and got upset about it. Should I leave potty training for a while?

From the moment he wakes up until bedtime he eats (or tries to eat!!) fruit all day long. I suppose it could be worse, it could be sweets, but he does not have a daytime nap and it is difficult to get him settled at night time. I was wondering if maybe the sugar in the fruit was giving him a buzz!! any ideas?

Is canning and jarring supposed to preserve it forever? Or does it have a shelf life that's not indicated anywhere on the can/jar? I have some old cans of Chunky Clam Chowder soup, I'm guessing it's about 5 years old. Also some jarred spaghetti sauce around the same age. They don't look any worse for wear. In my bachelor days I likely would have eaten them without any afterthought. I'm not as young as I used to be anymore though...

ID theorists often say it can't be disproved, but I'm not sure this is a merit. If it is wrong (as I believe) then in principle there must be some observation which would lead its advocates to conclude it should be rejected
