Perhaps using mascarpone cheese instead?
Cream cheese is hard on the teeth with sugars mixed in, is over filling and has a sour after taste. My apologies to the Torah for rejecting a bain of the Jews, cream cheese.
Sorry, don't like it, don't want it in my damn cheesecake.
Any recipes or ideas?

Just out of curiosity, could someone tell me where chile originated. Is it simply a creation of Tex-Mex, or something else. Thanx!

Do you simply wipe the grease from the last cooking with a paper towel, or are you supposed to totally wash and scrub it and season again with fresh oil?
