i want to make chilies rellenos as a casserole

The skin on theee outside of the pepper is a little tougher. Removing the skin makes for a tenderer feel in your mouth and roasting brings out the natural sugars via carmalization and the roasting also adds a smoky flavor. You don't have to it is all about what you like as far as flavor.

Its a question of the flavor. To make Chilies Rellenos you need to roast the peppers first.

As a 67 yo bachelor I hate to cook...
I am an excellent cook. And I love Chile Rellenos..
but I tried roasting the chile's WHAT a mess..
So I asked the clerk in the produce section about caned chile's..

Roasting gives goods a nicer flavor - caramelization of the sugars, the charring and the smoke.

The skin is peeled because it is hard to eat and cut. You can leave the skin on, but it's one of those steps that people do to make the dish extra special.

I think the easiest way to peel them is to roast, put immediately into a paper bag and close the end so they steam a bit, then peel.
