Depending on whether or not she can handle the whole idea of eating raw fish- i'd go for Maki, which is the cooked form of sushi. The California roll is a pretty popular maki, because the ingredients seem a little less risky to eat. And if she doesn't mind trying raw fish, then probally something with tuna in it.

Try the Ungi sushi I may have spelled that wrong they look like little footballs filled with rice they are very good also spider rolls are good the ones with eel are good kind of sweet but good. I like the ones that have the fish eggs on the outside or on the inside they are little and orange they pop in your mouth. I love sushi my best friend is Japanese so I have tried just about everything including sashimi (raw fish)

If you like shrimp, try a crunchy roll. It is a roll with fried shrimp in the middle, nothing raw and a very popular choice!
When you are ready to make the jump to a roll with some raw fish in it, try a roll that includes all of the ingredients of a California roll and also includes tuna. I have found tuna to be the mildest, easiest raw fish to start out with.
Most sushi places have different names for their rolls so just ask your sushi chef which roll they have that incorporates raw tuna into their California roll.

Try a Spider Roll. It's a delicious rice on the outside roll with cooked soft shell crab inside. This way, you will overcome the initial barrier of "ewwwwww it's raw fish". Then move on to a spicy tuna hand roll, and in no time you will be a sushi addict. It's an acquired taste, but I swear by it.

agree that the eel has a very sweet savory flavor that is easy for people to like, shrimp and salmon come cooked so that makes a good transition. The basic raw fish to try is tuna and yellowtail. You might also try the different rolls that many sushi places feature - they aren't the healthiest but loaded with yummy flavors - so look at the list of specialty rolls and look for one with flavors that look good to you.

Kappa Maki it is a cucumber roll if you want to start off with it
If you already like it go with the bento box- Japanese luch box or the eel and cucumber inside outside rolls\
YOu should eat things like this (they are the categorizes as these)
sashimi sushi, thin rolls (hosomaki-zushi), thick rolls (futomaki-zushi), inside-out rolls (uramaki-zushi), hand rolls (temaki-zushi), hand formed rolls (nigiri-zushi), scattered sushi (chirashi-zushi), pressed sushi (oshi-zushi), stuffed sushi (inari-zushi)

My favorite is Shrimp tempura rolls or spicy scallops. If you ever are in Chicago, go to OYSY japanese restaurant. I ate there once and don't like any of the local japanese restaurants I go to. But I would go for all cooked unless you are REALLY brave. I have tried the raw sushi and I can't do it but I know people who REALLY like it.

Unagi. It's eel. I know, sounds gross, but it is cooked so the texture is less off putting, and the sauce is delicious.
The flavor is similar to catfish.
After that try some crab rolls, then some SMOKED salmon rolls, and later graduate to raw tuna.
After that the skies the limit.

I love spicy scallop. But keep in mind that not all place makes the dish the same way. If they make it like how spicy tuna is...Then spicy scallop for me!!!
