If you're referring to casings, they come from various animal's intestines. Small sausages come from sheep (breakfast sausage links and hot dogs), medium sausages from pigs (Italian sausage, brats), and large sausages from cows (bologna)
There are also synthetic casings (plastic, essentially) and fiber casings. Fiber casings are used in salami, pepperoni, and the like. These casings are not edible and must be peeled from the sausage prior to eating.
Some people are disgusted by the details of sausage making, but it is an ancient artform with a rich history.

It can be sold uncased, or in links which may have a protein casing. It is commonly pan-fried in small patties, or cooked and crumbled into scrambled eggs or gravy
