I'm getting kind of tired of salads and I don't know where to buy tofu and stuff in an animal unfriendly place like Los Angeles.

I'd like to know the "scientific" principles behind stabilization of the fats in cheese when it melts. I'm interested in making some cheese sauces that don't separate when they melt, cool, or are re-heated. Sort of like a fondue (which I don't know how to make either, but that's another question!) :)
What is it that I add to melting cheese to keep it from separating so I can have some tasty homemade cheese dip? Thanks!!

I also don't drink milk, I drink soy milk.
I've been vegetarian for about 3 weeks now (and I admit, since I have started I have eaten chicken about 3-5 times).
I noticed my skin is significantly clearer of acne, but I'm worried that it's making my boobs smaller..

I am continually irritated when I buy leaf lettuce (never iceberg), knowing that in two or three days spots of black slime will appear and spead and that before I use even a fourth of it I will have to throw it out and buy another.

I wish to either know how to combat the black slime or that someone would invent a small head of lettuce that could be eaten before the black slime appears.

Pescatarians, or piscivore, or whatever else.

I choose not to eat meat because I believe that a vegetarian diet is healthier and the benefits of vegetarianism outweigh the benefits of eating meat. I don't believe that i am a "vegetarian" because I do enjoy fish on occasion.
I know that a fish is not a vegetable, hello, vegetables don't have bones! But at the end of the day, does it really matter? People have the freedom of choice, and can make their own decisions on health and ethics. Unless it really makes you feel more secure to call people names, why bother with labels and judging everyone else based on what you see as the "right" way to be.
Sure, animals are treated unethically sometimes, and I can understand that, but I'm not going to let trying to save the world one chicken at a time take over my life. I respect people who try to take such things into consideration, but it's harder to do when they go ridiculously overboard and insist on complete control.

Am I right, or wrong?

I'm not sure if it's supposed to be like that, but it seems to cakey and not very dough-like. I'm not very good at baking, so what should I do? I followed the recipe and everything.
