You have lots of choices with Hollandaise sauce, it can really help a nice piece of fish that you can poach or broil as you like. Of course Benedict is wonderful, poached eggs or any that you prefer on top of toasted English muffins with a nice slice of Canadian bacon or ham. Pour a Hollandaise over that you have a sophisticated brunch or dinner dish. All green vegetables work well with Hollandaise and savory crepes with shrimp or scallops would be very special. However, I encourage your to try making a Hollandaise from scratch and tell me you can buy the packaged kind again. I'm betting you won't so here's the recipe. It's just as easy as opening a package and you and your guest will be the better for it. Hope you have a blender or food processor.
3 egg yolks at room temperature
1 cube of unsalted butter, melted
2 TB fresh lemon juice
1/2 Ts salt
Process or blend egg yolks and lemon juice with salt for about 30 seconds, add butter slowly through the feed tube until Hollandaise comes together and is smooth. If too thick, add a Ts of hot water at a time until it reaches pouring consistency. Keep warm in a Thermos until ready to serve.

Take four steak au poivres and dip into a plate of crushed peppercorns combined with sea salt and garlic powder. Sprinkle with some lemon-pepper or lemon juice if around. Place in a casserole pan, shallow and made of glass, lined with olive oil. Mix a can of crab meat or lobster with a little vinegar and melted butter. Place over steak. Pour hollandaise sauce over and top each with a slice of low-fat mozzarella or Swiss cheese, even gouda is good. Or use grated white cheddar and bread crumbs. Bake for fifteen minutes and then broil for five minutes. Oven must be preheated to 400 degrees F. Broil at 450-500. Keep an eye on it. Cook some rice with broccoli and lemon peel. Serves 4.

Since it is basically butter you can do almost anything with it. My personal favorite is dipping artichokes and asparagus in it (sooo yummy!!!) but any veggie works great with it.
I also love eggs benedict (or any other egg special recipe with it, substitute some other meat)
Try it on a thick bread.
Be creative, like I said, it works similarly to how butter would.

The M-I-L makes (she buys them) prepared crepes and puts asparagus in them and pours the sauce over them. Its good too.

It sounds strange, but on top of asparagus or broccoli, it's also good drizzled over sage stuffing.
