Yum. Nothing better than a succulent bird. Not too dry, not overly wet yet but just right. Moist, tender, juicy. If it is too dry I would probably have to take out my baster and get some juice in it or on it and then use my spatula to work it around.

Interesting word spatula...comes from one of the Scandinavian countries and is said to mean tongue.

Happy Thanksgiving. I know I have a lot to be Thankful for.

Are loons as traditional in Canada as turkeys are in the US? If so they would be a natural for the main course.
