My grandpa is a diabetic and I was thinking about making him some little gingerbread men cookies for Christmas (he love sweets!). I have found lots of recipes for gingerbread cakes for diabetics, but not recipes to make gingerbread men for diabetics.

We have all agreed to just do 'snack' type dishes. They're coming between mealtimes, and I just plan to make duplicates for each day. My thinking was something like a festive "vegetable pizza" wreath: http://www.cdkitchen.com/recipes/recs/76/AppetizerWreath63536.shtml, a cheese ball and crackers, cookies, peanut butter balls, and the old crock pot cheese dip standby; sausage, cheese & cracker tray; veggie tray; and little smokies. My dear husband thinks I should just limit it to the dip, meat & cheese tray, veggie tray, and little smokies. Not me. What are some good, festive, *easy* finger foods you like to fix for just such an occasion???

My mom was tryin to make oatmeal cookies, and she either put in too much or not enough shortening. She made a double batch of it. The cookies taste fine they just look really flat, and she's baking them for her nephew and wants them to be PERFECT. Does anyone have any ideas on what we can do with all this batter?
