Does it just mean that it's a little old? And, if I don't mind the taste, is it safe to eat?

No, it's not typical. Zucchini skin might be a bit on the bitter side, but the flesh should not be bitter at all.

Older specimens, and zucchini raised in soil with a high sulfur content can be a bit bitter, particularly in the skin.

An easy remedy is to shred the squash on a v-slicer or mandolin. (Julienne blade is the best), squeeze as much of the water out as you can and give it a quick stir-fry with a little olive oil, a dab of butter for flavor, a pinch of garlich and a touch of salt...

Not mushy, and the bitterness will largely go with the wrung-out water.

Best wishes!

Any slight bitterness in a zucchini is usually in the skin which can be minimized by peeling if you wish or cooking longer.

if the zucchini is bitter that means it is not yet ripe that it still needs some time.
