Easy Ginger Biscuits
2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger
Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

I am not sure of your tastes in a cookie, so I would suggest you check out recipezaar.com. There are hundreds of recipes on there, and many are rated by the people that have made them, so you can get an idea of the ones that are really good. Their comments are right there on the page, so you can see if they had to do something different, or made any suggestions on how to make the recipe better. I have used that site for years and I always have good luck on there. You can search by the name of a recipe or by ingredient, also by the type of dish, i.e. dessert, cookie, side dish, entree, etc. It is a great site, and I know you will find a recipe that suits your taste. Good luck and Happy Holidays!!! Deb

Chocolate chip cookies, and oatmeal chocolate chip cookies!!! It is not Christmas for me if I do not bake those two...and of course Gingerbread, and for the kids peanut butter (big kids too!) I used to love to make the pressed sugar cookies, but my hands don't work as good as they used to, and no one has gifted me with an electric press.. (hint hint ... hee hee!) (Maybe that was cuz my sugar cookies sucked???? ) Sorry if my answer is run of the mill...but those are MY favorites anyway!!!

Mexican Wedding Cookies. They have a dry consistancy and the principal ingredients are butter and chopped pecans. They are rolled in powdered sugar after baking.

I don't know what they are called, but my mother would make cookies that included marzipan and nutella sandwiched between thin sugar cookies! They were delicious!
