Again it's a chicken brine q. I only have (fine grind) sea and table salts in my pantry, though most meat brine recipes call for kosher salt.
Is it ok to use sea salt?

What is the best way to drink cognac, and not feel as if you have something burning going down your throat?

Man, I'm not that hungry and I don't have the taste for anything, but it's dinnertime and I have no clue what to eat! I was thinking an apple and a banana or something light and healthy, but I can't decide. I was also thinking maybe a peanut butter and jelly sandwich would be nice, but peanut butter has too many calories. I'm vegetarian...does anyone have ideas?

I am making tamales and I think I will have extra (fresh) masa left over. I plan to make some more in two weeks and don't want to waste what I have leftover now. Can I freeze it? If so, will freezing it affect then using it later have an affect on the taste or anything else?

I don't want to oversalt the marinating meat. I'm using sea salt and sugar, 3/4 cup each to a gallon +cup of water. The chicken is under 3 lbs. I'm planning on marinating it overnight.
However, the brine tastes far too salty to me.

I'm gonna make my own pasta sauce for dinner tonight. What should I put into it. I do not have tomato sauce or tomato paste. So I am looking for something that is made with olive oil and spices or things found around your house. Is there any way I could make a pasta sauce using lemon juice?
