I don't want to oversalt the marinating meat. I'm using sea salt and sugar, 3/4 cup each to a gallon +cup of water. The chicken is under 3 lbs. I'm planning on marinating it overnight.
However, the brine tastes far too salty to me.

The rule of thumb is about 1 cup of kosher salt AND 1 cup white or brown sugar for each gallon of water. Be sure to take time to measure it, or it won't work right.

brines are not to be tasty,I'm sure you met 3/4 cup of each to a gallon of water is about right. if it taste nasty it should work well.
