What vegetable would replace dried beef circles for my cream cheese green onion wraps?

The normal ingredients are softened cream cheese smeared on dried beef wrapped around green onion. Let chill in the fridge over night.

I want to make a vegetarian wrap that uses something other than beef for some vegetarian friends of mine.

I had to cook for a friend and his wife we'd never met. I am a really decent cook, but that day I messed up bad, burned the sauce, my eggplant rollatini was so bad. Turns out the woman was a professional chef/caterer. She was very gracious. I also once used liquid dishwashing soap in my dishwasher. I felt like I Love Lucy! There was suds pouring out onto my floor. Too funny!
