take some large portabella caps, slice in thin strips (about a cm). drizzle with olive oil and balsamic vinegar and cook then in the oven until they get soft. let them cool before you try to roll them and be careful not to overcook them.

Smoked salmon wrapped around asparagus and tied with green onion strips or Puff pastry wrapped around asparagus spears. There are many interesting tortilla flavors out there, i.e avacado, sun-dried tomato, etc. If it wasn't vegetarian, I would suggest wrapping in ham or proscuitto.
Here's another idea:
Asparagus Sesame Rolls
12 fresh asparagus spears
12 bread slices,* crusts removed
1 package (8 ounces) cream cheese, softened
1/2 cup crumbled blue cheese
6 tablespoons butter or margarine, melted
1 tablespoon sesame seeds, toasted
Trim asparagus spears to 6 in. Flatten bread with a rolling pin. In a small mixing bowl, beat the cream cheese and blue cheese until combined. Spread over bread; top with an asparagus spear and roll up tightly. Roll in butter; place seam side down on a greased baking sheet. Sprinkle with sesame seeds. Bake at 375° for 14-16 minutes or until bottom is lightly browned. Yield: 1 dozen.

I like the portabello mushroom idea.
I also like the lettuce too, but I would spring for something a bit fancier like radicchio or something, since it's not llike you are using a ton of
Purple cabbage would be good.
Or zucchinni sliced lengthwise...
PS...since when are tortillas and wontons vegetables...and I am not really sure how you would use advacado as a wrap, but the combo of flavours would be good.

Grilled mushrooms would work. They are yummy and I am not a vegetarian. I would also recomment Grilled or slighty sauteed yellow butternut squash.
