I know you can keep the color of a cut potato by placing it in some water...it helps a bit. But why does this happen??? It also happens to apples, immediately. WHY???

this question is twofold
#1 i never realized that it could be made with cottage cheese....what is your preference - cottage cheese or ricotta cheese....i am ricotta all the way.
#2 this is going to sound stupid but you know how most people say lasagna like la-zan-ya? well how come the last three letters are the same as bologna but we pronounce it ba-low-nee?

I'm entering a baking contest in our city's State Fair this year. I need to make a dish that includes Ranch Dressing. I have to use a specific brand - Hidden Valley. I must use at least 2 tablespoons of the liquid variety or a package of the dried dressing.

Any suggestions? I need something that's unique but tasty!
