As for question #1, I definitely prefer ricotta. I even make homemade Mozzarella and ricotta (it's easier than you think. Visit http://www.cheesemaking.com/ if your interested)
As for #2 - It's just another shining example of how we Americans can't seem to follow any consistent rules of syntax.

I always use Ricotta cheese. It definitely has more flavor than cottage cheese. It's a little sweeter and the texture always turns out perfect. Cottage cheese is okay but why use it when you can get ricotta almost anywhere now a days. Ricotta also is availabe fat-free.
They way we pronounce it comes from the Italian pronounciation of the "gn" always having a soft sound where the g sound as we know it is not heard (if that makes sense) just like "gli" in Italian words sound like "L-yee".

I definetly prefer ricotta cheese. I actually mix half a small container of cream cheese in with a big container of ricotta. I have had it made with cottage cheese at a friends house, and I can't say that I cared for it. It definately wasn't the same. as for the 2cnd Q. I have no clue.

#1 I have had lasgna with cottage cheese. It taste the same. And I am 1/2 Italian . However I would prefer the roccotta. Oh the oven ready noodles are great.

I use cottage cheese......and I also use cream cheese. Some have really freaked when I said that but loooved it after they tried it. I mix my cottage cheese, my cream cheese, my parmasan cheese and 2 eggs in a bowl and that is 1 layer of my lasagna. As for your second question, lol...I have no clue I say la-zan-ya.

1... I like it either way... my Mom always made it with cottage cheese so I am a little partial to that.
2... people are pronouncing Bologna incorrectly it should be pronounced Ba-low-na, however everyone says it ba-low-nee no matter how many times you correct them.

I hate cottage cheese in la-zoh-nee. :D (Sorry, couldn't resist.) I think it adds too much moisture, and I don't like the texture (even when using small curd cottage cheese.) I much prefer ricotta...it's creamier, blends in better and has a better flavor.

i use both to make it cheaper. but when using cottage cheese i put through a food processor to make the consistency similar to the ricotta so there are no "chunks" that won't melt.

Bologna is a town.. and it is pronounced like Lasagna... however the meat name have been simplified and american-ized.. who knows where or how it started..
As for the cheese.. I actually don't care for either kind.. I preferr just to use a mixture of mozzarella and jack.. not italian i know. but we like it..
