Of course they do. The just get solid again as the cookie cools down

They do melt to some degree but they are so think and the cookie itself is so thin that the cookie finishes cooking before the chips can fully melt. Think about the last time you bit into a Chocolate Chip cookie right out of the oven. Rember all the chocolate goo in the center before it cooled. That's the melted chips. When they cool they get hard again so it's like they never melted at all.

The chocolate chips don't melt because the batter/dough mix acts as an insulator, in the same way that Baked Alaska works. The tiny air bubbles in the meringue insulates the ice-cream from the heat of the oven so the meringue cooks and the ice-cream doesn't. So, in a choc chip cookie, the tiny air bubbles in the batter/dough insulate the choc chips from the heat. The choc chips on the surface of the cookie do melt but are contained by the batter/dough and as the cookie cools upon removal from the oven, so do the choc chips and they re-set.

They do, and when the cookie cools, they cool also, that is why, if you bite into a hot chocolate cookie, some of the chips are still hot and melted.

They do melt quite a bit, but then they harden up again as the cookies cool.

Cheap chocolate chips, Only use Nestles chips, They are the best, Actually the cheap chips don't melt.

They do, but when the cookies cool, so do the chocolate chips, so they firm up again.

Do you know, I have always wondered the same thing - especially as soon as you pick one up you get covered in chocolate!!!! They don't seem to melt when they are cooked as the look like the ones you buy AFTER cooking - it's a mystery!

They should. Chips that are exposed to the heat more than the inside ones would melt more.

Chocolate has a melting point of 98.5 degrees!!! That's why it melts in your mouth and not in your hands... It does melt... Cools down and becomes a solid again...
