Small Business - March 2007

I'm not too sure where to start. I'm taking on my parents business and it's in decline. The changes that need to be made are drastic cause they're losing business but I don't even know where to start. I'd like to write a business/marketing plan, but they think it's all unnecessary work. On top of it, they do all their paperwork on actual paper, so i'm trying to get it all on a computer. I'm afraid they won't use it, cause they show extreme fear.
Any ideas as to how to organize and improve with efficiency?

I'm looking for a recommendation for CRM (Customer Relationship Manager) software. I have a small consulting business of about 75 clients. I want to keep address data, notes about their hardware, a work history, and if possible maps of their locations to conveniently print for travel. I currently use Quickbooks Customer Manager 2.0 but would consider an alternative as long as it's not too extremely expensive. I would like to avoid Outlook integration and find something either open source or not so locked in proprietary data file formats.

On dec 19/2006 I hired a licensed contractor to remodel my kitchen with new granite. It is already March 26/2007 and he has not finished. Some of its done. My problem is that I thougth he was going to be honest and I paid him always with cash and I have paid him all the money he asked for.... He does not return my calls anymore and he has not finished the job.

This may seem like a stupid question but really I have no clue when it comes to this stuff. All I know is I'm about to start a business in the entertainment industry and I have to get incorporated and get a tax ID number. I am the only person running the business. I have no partners, no one is financing me, this is all on me. However I still want benefits when I get incorporated, whether it be tax benefits, not being liable of I suffer some fallback/debt, etc. - or whatever. I just don't have a clue about this stuff. Can someone please help me? I appreciate it alot. Thanks.
