With my husband's school and work schedule, it's my son and I for dinner four nights a week and I get home around 5:45 and my son goes to sleep around 7, so I need some quick dinner ideas using our specific diet. I'm vegetarian, I don't drink milk or use eggs for cooking. I use soy milk and I do eat cheese. Example dinner: broccoli you can steam microwave in it's own bag (5 min.) instant mashed potatoes (boil water, add dehydrated potatoes) vegetarian chicken patty (micro 1 min.) This was last nights meal and typical of what we like and my ideal time to prepare! We don't like many veggies (spinich, whole mushrooms, peppers) and get our main source of protein from beans and veggie meat products. I don't like to cook with tofu. I'm really getting tired of noodles with a side salad or grilled cheese and soup. Does any one have quick (15 min or less) complete meal ideas using easy on hand items?

I'm actually thinking about it. (But I still want to eat eggs and drink milk) Problem is my family is big on eating meat...I mean they buy so much meat and everything. I'm worried that if I try to say something about it my dad will automattically say NO and take me to a psychologist or something because he'll think i'm trying to loose weight( Lost weight on accident 2 years ago...really...they did all these tests and everything and all the doctors agreed that my metabolism was on speed and I was eating the same amount of food even when it sped up.) So i'm super worried. I love him to death but when he gets angry he'll yell and never listen to a word I say. WHAT SHOULD I DO?

I need some new recipes! I would like some simple but filling vegetarian recipes. But alot of the recipes I see call for ingredients that are difficult to obtain unless I travel to special stores. Can anyone suggest some hearty recipes with ingredients I can find at most regular grocery stores?

I've been a veggie for years and years (about 14, now) but I've noticed that my diet's really going down the pan. I'm getting bored, cooking the same old things just for one person (I live seperately to my bf for half of the week) and could really do with some quick, healthy, tasty ideas for lunches/dinners for one. Any ideas? I'm all out of inspiration (and money!!)

Tunnocks were veggie 2 years ago, but alas they have gone the same as the rest and put dead pigs in them.

I have a brother who's handicapped who get sick alot during the winter. My mom has the juiceman juicer. I would appreciate any veggie or fruit recipes to boost the immune system. My mom lost the little booklet that came with the juicer. Thank you!!!
