In the egg area of the grocery store, there are a few brands of egg substitute. They come in what looks like small milk cartons.

The best thing I've found depends on my situation. My general favorite is 1 tablespoon flaxseed meal and 3 tablespoons of water. You can add a little vegetarian chicken flavoring to give it an "eggier" flavor. Just blend it up and you have a substitute for one egg.

It's a great binder, it doesn't have an aftertaste, you can even make mayonaise from it. I couldn't taste a difference between that and real mayonaise.

Sometimes I use enerG but I tend to prefer the flaxseed substitiute because besides replacing the egg, I'm getting the benifits from the flaxseeds as well.

Tofu is great for scrambled eggs, or dishes where "eggs" need to stand out. Flaxseed is good for french toast or baking or anything else egg based. EnerG is good for baking, but not much else.

Contrary to what people think, eggs are among the most cruel animal products out there (yes, worse than meat), so I'm glad you don't eat them!

You've gotten a lot of good answers here, but the one that seems to be missing is: applesauce! For baking cookies and banana breads, etc, using 1/4 cup applesauce instead of an egg makes a great egg replacer.

The egg product in cartons in the grocery store is still egg! It's just processed, so don't buy that.

I would recommend checking out http://www.vegweb.com for recipes. For example, if you want to make a cake, look up a recipe there and there will be vegan recipes (so no eggs).

Well it depends on what you'd like to do with them :)
For things like boiled and fried eggs there are obviously no substitutes, but I've had some awesome faux egg salads made of Tofu. You can find lots of recipes for that online. And if it's cakes you want to make, check out Enter-G Egg Replacer :)

Tofu and EnerG mentioned above are good choices. Here's a tip if you want to recreate the 'eggy' flavor. Get some black rock salt from an Indian grocery store. This stuff contains sodium sulfide, which is chemically similar to the sulfides present in egg white. Use a pinch in the tofu scramble.

Well. There is no substitute in savory food. You can make tofu scramble instead of scrambled eggs.
When it comes to baking as some people mentioned it, egg replacer is the answer. I am giving you a link to vegan pastry chefs and their tricks. Very interesting.

I use EnerG Egg Replacer for my baking. It is a vegan product and comes in powder form. For scrambled egg like food, go with Tofu Scramble. You mix it with Silken soft tofu. Health food stores and the natural food section of larger grocer's should have them both.

I use 1/2 a banana
or 1 tablespoon of ground flax mixed with 2 tablespoons of water

I've never used ener-g... never needed to. I think these are easier and healthier.

An egg is not an animal until it is fertilized, so go ahead and eat the egg. Eggs you buy in the market havent been fertilized.
