Vegan Sugar Cookies

1 cup vegan margarine (try Earth Balance)
1 cup vegetable oil
1 1/2 cups confectioners' sugar
1 cup white vegan sugar
3 teaspoons Ener-G Egg Substitute
1 teaspoon vanilla extract
4 1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup white vegan sugar

1. Preheat oven 350 degrees.
2. In a large bowl, cream together the vegan margarine, oil, confectioners' sugar, and 1 cup vegan white sugar until light and fluffy. Beat in pre-mixed egg replacer and stir in the vanilla. Combine the flour, baking soda, and cream of tartar; stir into the creamed mixture. Roll dough into 1 inch balls, and then roll the balls in remaining white sugar. Place onto ungreased cookie sheets and flatten with a fork.
3. Bake for 8 to 10 minutes in the preheated oven, or until the edges begin to brown. Cool on wire racks, if desired.

*You can also mix food coloring with white sugar for rollong the cookies in, to make them more festive.

Really anything you, want most dessert like ice cream, chocolate, cake (unless you are a vegetarian that doesn't eat eggs). I happen to be a vegetarian myself, but I do eat eggs.

Do you mean vegan (dairy free desserts)? Most desserts are vegetarian. They don't contain any meat.

Cranberry Crumb Squares
Prep Time: 15 minutes plus baking time
Servings: 8-10

3/4 cup (175 mL) butter, softened
1/3 cup (75 mL) icing sugar
1 1/2 cups (375 mL) all-purpose flour
1 pkg (250 g) cream cheese, softened
1 can (300 mL) Regular or Low Fat Eagle Brand®
1/4 cup (50 mL) lemon juice
3 tbsp (45 mL) brown sugar, divided
2 tbsp (30 mL) corn starch
1 can (398 mL) whole cranberry sauce
1/4 cup (50 mL) cold butter
1/3 cup (1/3 mL) all-purpose flour
3/4 cup (175 mL) chopped walnuts


1. Cream together softened butter and icing sugar until light and fluffy. Gradually beat in flour. Press onto bottom of 13 x9-inch (3.5 L) baking pan and bake in preheated 350°F (180°C) oven 15 minutes or until lightly browned. Reduce oven temperature to 325°F (160°C).
2. In large mixer bowl, beat cream cheese until fluffy and gradually beat in Eagle Brand until smooth. Stir in lemon juice. Pour over crust in pan.
3. Combine 1 tbsp (15mL) brown sugar and corn starch; mix well. Blend in cranberry sauce. Spoon evenly over cheese mixture.
4. Combine remaining brown sugar and 1/3 cup (75 mL) flour in medium mixing bowl. Cut in cold butter with pastry blender until crumbly. Stir in nuts. Sprinkle evenly over cranberry mixture.
5. Bake 45 to 50 minutes or until bubbly and golden. Cool. Cut into squares. Serve warm or chilled. Refrigerate leftovers.
