Depends upon the restaurant...
Mexican restaurants like using Lard (Manteca) which is pork fat.
However, a lot of mexican restaurants are moving away from lard becuase customers get turned off by that.

The beans often have lard and the rice has chicken stock. The only thing you can do is ask. I am amazed at how many "veggie" burritos have lard in them. Stay away from large chains as well as the employees do not often know whats in the food. I went to Chevy's a few times and was given different answers by the wait staff in regards to whats in the rice and beans.

It is true that in latin america in very poor houses they do it that way since they buy the cow fat in the butchery, but when you can use vegetavel oil instead, they use it,
I don't think the mexican restaurants do so, you could notice ii if when the dish is cold the fat creates a blury layer, which good look disgusting.

A lot of the Mexican restaurants in California had a portion of the menu for "Lent". It's some Catholic thing (I think) where you're supposed to give something up during their Lent. Many of them apparently give up meat or animal products, but the restaurants know vegetarians will order from it year round so that menu is generally always available.
Double check with the restaurant if you're not sure. They'll gladly tell you, in my experience.

Yes, but a lot of them let you get it without, or at least can check and find you veg meals. Mexican places seem to often have more veg options than others, if you ask.

Most of them do. You need to ask your server to check the labels for you. You should know automatically that any burrito sauce has beef stock and that their refried beans probably have lard. Order the black beans instead.
