Make a wrap out of all kinds of yummy stuff. I'm a veggie and that's what I do.
Use either flat bread or tortillas and try the different flavors (trader joes has a good selection)
hummus and cranberries (my personal fav)
cream cheese and roasted red peppers
sun dried tomatoes, pesto and mozzarella
lettuce, advocado, tomato, red onion and italian dressing
peanut butter, honey, bananas
peanut butter and dried berries
veggie deli sices, cheese, and mustard or mayo
Get creative and enjoy!!

There's a variety of things for a vegetarian to have at lunch. I used to be a vegetarian, and i would take little slices of veggies, a water bottle, or i would take all my favorite fruits: and put them in a blender. Also, i would take some almonds, some applesauce, or some cottage cheese. If this doesn't help, I'm sorry!

I'm a big fan of soft tortillas because you can be so creative about what you roll up in them. If you are not vegan, you could roll cream cheese and sauteed veggies into one and chill for later. Also, pimiento cheese works great like that, too. Black beans and rice with a little salsa wrapped in a tortilla is tasty. Hummus and crackers with fruit is a good option. Hummus, as you probably know comes in many different flavors. I particularly like black bean hummus. Good luck.
